In celebration of summer, sun and all things smoked, Bedford Lodge Hotel & Spa will be presenting a special edition Smokehouse Menu in its 2AA hotel restaurant, Squires, from 18th – 24th July.

The mouth-watering menu will include produce from some of the Hotel’s favourite regional suppliers, including: Newmarket-based artisan curers and smokers of traditional fish and meat, Chapel & Swan; Stickleback fish and seafood; P J Sands Meats in Halesworth; and lamb from Denham Estate in Bury St Edmunds. Many of the ingredients will be smoked in-house by Bedford Lodge Hotel & Spa’s skilled kitchen team.

The smouldering three-course set menu will be comprised of a variety of unique dishes, which turn the flavours of summer into a sensational fine dining experience. To start, diners will choose from Brancaster mussels with white wine, kiln smoked salmon, crème fraiche, spring onions and crayfish tails; wood-baked smoked camembert with charred mission fig and rosemary bread; or, smoked Gressingham duck breast with apple gel, candied walnuts and seeped gooseberries.

The main course selection includes specialities such as: thyme smoked lamb rump with cherry tomato confit and broad bean ragout and sautéed polenta cubes; as well as a paupiette of lemon sole with a smoked salmon mousse, charred pink grapefruit, Romanesco, basil mash and Riesling cream. Sure to delight the taste buds is the seared halloumi with roast butternut wilted spinach, babaganoush, crushed chickpeas and wasabi pea dust. To top off the experience, diners can select a dessert from the regular fixed price menu.
